Named for the lesson in resilience instilled by the father of Georges and Daniel Daou, Soul of a Lion is the crown jewel of DAOU, and an emblem of our quest to produce Cabernet Sauvignon from the terroir of DAOU Mountain and the Adelaida District of Paso Robles.
GRAPE VARIETY: 82% Cabernet Sauvignon, 12% Cabernet Franc, 6% Petit Verdot (V21)
TASTING NOTE: Abundant fruit aromas of black cherry, blackberry, blueberry jam, and black currant are interwoven with accents of baking spices, sage, and graphite.
PAIRING: Grilled ribeye steak with shallot-red wine reduction and herb-roasted potatoes, lamb bolognaise, aged English cheddar
