WINE SPECIFICATION
VINEYARD REGION: Barossa | Adelaide Hills | Clare Valley
VINTAGE CONDITIONS: Vine growth was slow yet healthy, after a long, wet winter, one of the wettest Septembers on record, and a cool spring and early summer. Post-veraison was
moderate, with short bursts of heat and well-timed rain. An Indian summer allowed consistent ripening, with cool late-March nights extending vintage into May. Wines are
well-structured, bright and aromatic, with good colour and natural acidity.
GRAPE VARIETY: 53% Cabernet Sauvignon | 47% Shiraz
MATURATION: Matured as individual vineyard batches in a combination of 66% seasoned and 14% new French oak, and 16% seasoned and 4% new American oak for 16 months.
PEAK DRINKING: Will develop with age, softening and mellowing to reward a decade or more of careful cellaring.
FOOD MATCH: Great with chargrilled beef tenderloin with caramelised shallots, or roast leg of lamb with rosemary and fresh mint sauce.
COLOUR: Deep crimson with purple hues.
NOSE: A rich, dark fruit profile with layers of blackberry and cassis, black olive and
cedary oak.
PALATE: A generous and complete wine that offers both richness and finesse, with
fine, powdery tannins giving length to the finish.
